Veg fried rice
Veg fried rice is another recipe from Indochinese cuisine. This is one of the famous street foods of Indian subcontinent from a small town to metropolitan cities. This simple and humble recipe is prepared with cooked basmati rice, fresh veggies with a dash of soy sauce. The specialty of veg fried rice is the crunchiness of the veggies remain the same. Here I present aromatic and tasty veg fried rice to relish anytime. Njoy Cooking, Serving n Savoring!

Cuisine: Indo Chinese
Basmati Rice: 2 cups
Oil: 3 tbsp
Water: As required to cook basmati rice
Carrot: 1 no.
French beans: Few
Spring onion: 1 no. Half bunch
Green capsicum: 1 no. Small
Red and yellow bell peppers: Small pieces
Ginger: 1 inch piece
Garlic flakes: 4/5 nos.
Green chilli: 1 no.
Soya sauce: 1 1/2-2 tbsp
Salt: As required
Black pepper powder: 1 tsp
Method of preparation:
1. Take 2 cups of basmati rice, rinse well with water till 3/4 times to remove the extra starch present in rice. Soak the rice in 6 cups of water.
2. Take all the required veggies. Rinse them thoroughly with water. Chop all the veggies into fine pieces. Also chop green chilli, ginger and garlic. Keep them aside.
3. After 30 minutes of soaking, add three more cups of water and 3/4 drops of oil into it.
4. Cook the rice on high flame for 20 minutes(Approximately) or the rice becomes al dente(Just cooked).
5. When the rice is just cooked drain the excess water using colander.
6. Allow to drain excess water completely and transfer the cooked rice into a broad vessel.
7. Now heat kadai and pour oil to sauté the veggies.
8. Put chopped ginger and garlic. Sauté for a minute.
9. Now add chopped spring onion whites, chopped beans and green chilli. Sauté them too.
10. Now add chopped carrot pieces into it. Sauté them on high flame to remain their crunchiness.
11. Now add chopped red, yellow and green capsicum pieces. Mix well and continue to sauté on high flame.
12. Now add required amount of soya sauce and black pepper powder too. Mix well and sauté for two minutes.
13. Now add cooked basmati rice into it.
14. Mix thoroughly the veggies and rice. If required add little amount of salt.
15. Add finely chopped spring onion greens as a garnish.
16. Transfer the fried rice into a serving bowl.
17. Now the tempting and tasty veg fried rice is ready to serve with mix vegetable sauce(Chinese). I’ll post mix vegetable sauce recipe soon.
Tomato ketchup can also be added along with soya sauce.
