Carrot raisin salad
Carrot raisin salad is very healthy and refreshing salad which can be prepared in a jiffy. The salad doesn’t require any cooking. Grated carrot is used to prepare the salad. Raisins and dried blue berries are added along with salt, lemon juice and crushed black pepper powder. This is an amazing recipe during fasting days too. Here I present tasty, tangy carrot raisin salad which can be served anytime. Njoy Cooking, Serving n Savoring!
Carrot: 1 no. Big or 2 nos. small
Raisins: 2 tsp
Blue berries: Few(Optional)
Salt: As required
Whole block peppercorns: 5-6 nos.
Lemon juice: 1 tsp
Method of preparation:
1. Take one big carrot and rinse well. Remove the edges and peel the skin. Grate the carrot using a grater.
2. Now add raisins and dried blue berries to the grated carrot. Also add one tsp of lemon juice, required amount of salt and crushed black pepper.
3. Mix well using a spoon and allow to rest for 30 minutes. Raisins puff up and give nice taste to the salad.
4. Now transfer the crunchy, juicy carrot raisin salad onto a serving plate and serve anytime.
